On the days when my energy is low, or when I simply want something that embraces me with quiet warmth, I go back to one thing: curd rice.

It’s the simplest dish on my plate, yet somehow the most comforting. There’s a kind of magic in its cooling nature, softness, warmth, and simplicity.

A light, refreshing, and deeply comforting South Indian dish, Curd rice is made by combining soft-cooked rice with creamy yogurt and a flavorful tempering of mustard seeds, curry leaves, and green chilies.

It is often enjoyed as the final course in a South Indian meal or as a simple, cooling lunch on hot summer days and is loved for its cooling properties, probiotic benefits, and easy preparation.

Recipe

Ingredients

  • Cooked rice- 1/2 cup
  • Curd- 1.5 cup
  • Cumin seeds- 1 teaspoon
  • Mustard seeds- 1 teaspoon
  • Dried red chilli broken- 1
  • Curry leaves- 1 sprig
  • Asafoetida- 1 pinch
  • Minced ginger- 1/2 teaspoon
  • Roasted cashewnuts- 6
  • Oil- 1 tablespoon
  • Salt to taste
  • Optional: handful of fresh pomegranate seeds

Method

Step 1: Pressure cook rice with salt until soft (2 whistles), once the pressure is released, mash it gently. Allow to cool.

Step 2: Add curd to the cooled rice, mix and combine well.

Step 3: Heat oil in a pan, add cumin and mustard seeds. Once they start spluttering, add red chilli, and cashew nuts.

Step 4: Add ginger, curry leaves and asafoetida.

Step 5: Pour this tempering over the curd rice and mix well.

Step 6: Garnish with fresh pomegranate seeds.
