Recipe

Ingredients
- Cooked rice- 1/2 cup
- Curd- 1.5 cup
- Cumin seeds- 1 teaspoon
- Mustard seeds- 1 teaspoon
- Dried red chilli broken- 1
- Curry leaves- 1 sprig
- Asafoetida- 1 pinch
- Minced ginger- 1/2 teaspoon
- Roasted cashewnuts- 6
- Oil- 1 tablespoon
- Salt to taste
- Optional: handful of fresh pomegranate seeds
Method
Step 1: Pressure cook rice with salt until soft (2 whistles), once the pressure is released, mash it gently. Allow to cool.
Step 2: Add curd to the cooled rice, mix and combine well.
Step 3: Heat oil in a pan, add cumin and mustard seeds. Once they start spluttering, add red chilli, and cashew nuts.
Step 4: Add ginger, curry leaves and asafoetida.
Step 5: Pour this tempering over the curd rice and mix well.
Step 6: Garnish with fresh pomegranate seeds.
